The Fixings

cold soup has never been something that I craved; so you can imagine my surprise when I admitted that the most memorable Dish I tasted in Cabo was a Gazpacho. and Then my delight when DON manuel’s AT CAPELLA PEDREGAL shared the super simple recipe. Enjoy! -mario 2 cp Piquillo pepper 10 pz Tomatoes 1 bunch Basil 1 pz Cucumber 1 bunch Parsley ½ pz Onion 250 ml Sherry vinegar 4 pz Red bell pepper 2 pz white bread 100 ml olive oil Roast the red bell pepper. Mix all the ingredients, except for the white bread, in a container and marinate with the sherry vinegar for 1 day. Blend everything with the white bread and the olive oil. Add salt and pepper to taste.

Note: Dice watermelon, cherry tomatoes and cucumber to add a little crunch to this incredible dish.
